SUMMER FUN WATERMELON SALAD

Serves 8-10 people

1 small (or ½ large) seedless watermelon
1 cup fresh basil leaves, thinly sliced
½ cup fresh mint leaves, thinly sliced
½ cup crumbled feta
2 tbsp fresh lime juice
2 tbsp balsamic vinegar
3 tbsp extra virgin olive oil or avocado oil
Ground black pepper to taste
Chill watermelon in fridge until ready to use. Remove rind and chop watermelon into 1 inch cubes.
Mix the feta, basil, and mint into the watermelon chunks.
In a separate bowl, whisk the lime juice, balsamic vinegar, olive oil, and pepper. Pour dressing over melon mixture and toss gently.
Serve immediately
